The reason the layers form is because of the density of the liquids. If you pour the gin in too quickly, it will mix with the grapefruit mixture and will not form a top layer. A trick to help create the layers is to use the back of a spoon to pour the gin onto first, which allows it to slowly cascade into the glass on top of the grapefruit mixture.
